Among the hottest of chiles known to man, the ghost ( Bhut Jolokia) originated in India. It produces a seriously intense heat in the range of 1 million Scoville heat units compared to the Habanero’s range of 200,000 to 350,000 units. Be aware that the scent alone can be irritating, we advise that you wear rubber gloves and avoid contact with the eyes and exposed skin when handling. The ghost pepper has been used in curries, chutneys and as a pickling spice – it is best to use this pepper very sparingly in your recipes as the heat can overwhelm both the dish and the person eating it.
