Ancho is a dried poblano chile and a popular staple in Mexican cooking. It is generally mild, but can occasionally reach medium heat. Ancho is the sweetest of the dried chiles with a mild, fruity flavor and hints of coffee, raisin, plum and licorice. The powder features a deep red color and is a great base for a variety of Mexican dishes, chili, meat rubs, and sauces. Also available in flakes and granules.
